A group of us from Poly-Wood traveled to Michigan for a photo shoot last week, and we figured we wouldn’t be true Indiana natives if we didn’t enjoy some corn during our stay. Since we were planning to have a campfire, we decided to try out a simple camping recipe: Fire Roasted Corn on the Cob.
Although there are many ways to dress up corn, we opted for the simplest ingredients – oil, butter, salt and pepper.
Step 1 | It’s easiest to pre-cut squares of foil for each corn you’ll be cooking, lay them out on the counter, then lay one corn on each square.
Step 2 | Begin by drizzling a bit of olive oil over each corn on the cob and then add your desired amount of butter, salt, and pepper on top.
Step 3 | The key to what we call the ‘Tuck & Roll’ method is to fold the side edges of the foil over the corn, keeping them tucked in place as you roll the rest of the foil over the corn – like a skinny burrito. This will keep all of the deliciousness inside the foil as the corn cooks.
Step 4 | Once you have a good fire going (you can see embers), place each covered corn on the cob at the edge of your fire pit, turning continually until the corn is hot (around 15 minutes) . Once they’re done, let them cool a bit and enjoy the most delicious corn you’ve ever tasted!
We love that this recipe could be easily prepped ahead of time and brought on any camping trip or outdoor party with a fire pit or grill.
